Hideko's Japanese 

Sushi Rice & Soirée Sushi  


<Sushi Rice> 
3 cups uncooked Japanese rice (= 9 cups COOKED rice) 
3 cups water 
200 ml Rice Vinegar 
5 TBSP granulated sugar
1 tsp sea salt 

<Spicy Tuna> 
5 oz Maguro Tuna (sashimi grade)  
2 TBSP chives 
1 TBSP mayonnaise 
2 tsp soy sauce (with dashi) 
2 tsp chili garlic sauce 
Sesami (for topping) 

<Salmon Wasabi Cucumber> 
5 oz King Salmon (sashimi grade) 
2 TBSP cucumber 
1 TBSP radish sprouts (or chives) 
1 tsp wasabi
3 tsp soy sauce (with dashi)
Salmon Roe (for topping)
